For Disney Dreamlight Valley players who want to know all those characters and their professions, this guide will help you out.
Basics on Character Professions
The Basics:
1.) Each Character has 1 Profession, unlocked and chosen by you on getting them to Friendship Level 2.
2.) The Character that follows you increases the chances to get double items per every Friendship Level she/he obtained in the 1 Profession you selected at Level 2. For instance, Gardening gives a chance to get +1 extra crop per every crop you harvest, this extra harvest will spawn in a free cell somewhere near the one you just harvested.
3.) Characters that do NOT follow you still increase the chances to get double items per every Friendship Level per every Character that has the same 1 Profession as the Character that follows you. Having a follower and a non-follower both with Gardening causes the chance to get double items to rise past if you only had a follower with Gardening.
4.) This essentially means, that the Profession(s) you like the most should align with the Professions you choose for every single character at Level 2, to get the maximum chance for double items in that Profession. If you dont want to conduct fishing outside of quest-related requirements, why give Characters that Profession instead of allowing them to increase the chances for your preferred one ?
5.) Each Profession has a set of items that fall into that category and some of which do not. Here is the chart for every Profession.
As can be seen, Foraging and Gardening have an odd distribution of items while the other 3 have a set of obvious objects to generate the chances for double items.

Also, some Professions take a longer time to yield any items to generate the chance for double items, making them poor Profession choices unless you are dead set on doing them. Here is my advice on each Profession:
A.) Foraging, Profession choice Rating: 7/10
This Profession has immediate access to items for double chance. Neither Fruit Trees or Bushes require any Watering from you and harvesting items is quite fast. However, after you harvested all your Trees and Bushes, you have nothing to do in the meantime of waiting for them to regrow.
The items yield an average price, compareable to Crops. Make sure to use the “Furniture” menu to place each and every Fruit Free and Bush in close proximity to each other. They will grow in any Biome so you can collect all of them from any Biome you unlock at 1 centralized location.
If you unlocked a Biome and some items are blocking your way towards a Fruit Tree or Bush, you can still move them toiwards you from the “Furniture” menu.
B.) Gardening, Profession choice Rating: 4/10
Sadly, Gardening requires by far the most time to yield items for double chance. Late-game Crops require 1-2 hours of waiting with nothing to do in the meantime and planting and watering all the crops takes a sh#tload of your time.
You should only choose this as a Profession if you are dead set on Gardening to generate money. Since Cooking disallows you to create food in stacks, youre also only looking at more Crops to sell to Goofys stalls and more items to quickly clutter your rather limited inventory space.
C.) Fishing, Profession choice Rating: 7/10
Fishing requires a good amount of time, yet getting double Fish yields double money and they are quite valuable. Fishing Spots are generated in an ongoing way, so you never run out of spots to do this Profession. If you like the Fishing minigame you should opt for this Profession, if you dont, you should refrain of getting it on any 1 Character.
D.) Mining, Profession choice Rating: 10/10
The clear winner of the way the Profession system is implemented in Dreamlight Valley, Mining not only has a chance to get standard Gems in addition to minerals up to Gold and such, but there are also Shiny Gems, so you get another set of items with vast value for double chance. Mining spots are generated in an ongoing way, so nothing can prevent you from doing this Profession whenever you like.
You should choose this Profession at least for some characters in your save, unless you really hate Mining for some reasons.
E.) Digging, Profession choice Rating: 1/10
Sadly, Digging items are usually lowest in how much money they make, Pebbles and such wont make you any money. Digging takes as much time as planting Crops with Gardening, though you dont have to wait for items to grow to get double chance.
Note that I didnt found that Coins or Dream Shards found while Digging with a Character with this Profession were given a chance to be doubled, so this could very well be the worst choice of Profession. Only choose this if you are dead set on Digging.
You can “un-Dig” all the spots you already digged at by placing a building on top of them. The building will flatten the ground, allowing you to dig at these spots again.
