When you hire you can preview the maxed stats and skills of any employee before you hire them. However, since the maxed stats are at level 20 I didn’t find this very useful, because you won’t be able to get them to level 20, due the training costs costing hundreds of thousands.

Employees gain skills at level 3 and 7.
I found the most useful spot to be for role determination at level 10 stats and wrote them down.

Cooks require high cooking stats to cook faster.
The ingredient prep skill has a chance to increase cooked plates by 5% (Expert) or 10% (Master).Best cooks in order:

Servers require high servings stats to serve faster.
There are many useful skills for servers, namely:
Cleaning/Cleaning Master – Drink Serving/Drinking Serving Master – Cocktail Serving – Wasabi Refill – Tip Master – Master Drink MakerBest servers in order:

Once you progress in the story and unlock a restaurant branch you need to assign a manager.
The manager fulfills the role of Dave in the branch restaurant and can do ALL the tasks (cleaning, serving drinks, refilling wasabi) regardless of their skills!
They should have a mix of high cooking for rank/unlocked dishes as well as high serving to be able to serve quickly. Their total stats have to be high in order to attract more customers (Popularity).Best managers in order:

If you have left over staff put them on dispatch to procure items for you. A higher procure stat will improve the yield, and the skill “Dispatch Master” further increases the amount of items acquired through dispatch.
