The Winery – Winemaking Simulator: All Wines Guide

Posted on November 6, 2026

I still remember the first time I stared at my fermentation tanks and realized I had no real plan for which wines I was supposed to be producing. The Winery – Winemaking Simulator is a game that rewards curiosity, and hunting down every wine variety is honestly one of its great pleasures — but there comes a point where you just want to fill out the list and see every label on the shelf. That is exactly the wall I hit, and it is why I put this together. Below is every wine variety in the game and the exact combination of harvest timing, yeast, pressing, malolactic fermentation, aging vessel, and aging duration that produces each one.

How to Read These Combinations

Before you start punching settings into your tanks, it helps to understand that some of these winemaking features only open up as you progress through the game. So if a combination calls for something like Malolactic Fermentation or a particular yeast strain and you don’t see the option yet, that is not a bug — you just have not unlocked it. Work through the ones you can make first, and the rest will come as your winery matures.

Each row below is a complete recipe. Match the harvest timing, choose the right yeast, set your pressing method, decide on malolactic fermentation, pick the aging vessel, and let it rest for the listed duration. Miss one of these and you get a different wine entirely — which is the whole charm of the system, but also the reason I kept a table like this open on a second monitor.

All Wine Varieties

Name Harvest Fermentation Pressing Malolactic Fermentation Aging Method Aging Duration
Rust and grape Mid Cultured Yeast Immediate Skip New Oak Barrels Short
Barely Legal Early Cultured Yeast Own Weight Enable Old Oak Barrels Short
No.7 Batch Early Wild Yeast Extended Skip Concrete Short
It happens Early Cultured Yeast Immediate Skip Concrete Long
Sillent Celler Early Wild Yeast Own Weight Skip Old Oak Barrels Medium
Last Dance Late Cultured Yeast Own Weight Enable Stainless Steel Short
Mauvais Choix Reserve Mid Hybrid Yeast Immediate Enable New Oak Barrels Medium
Off Season Early Wild Yeast Immediate Skip Stainless Steel Short
Dead line Late Hybrid Yeast Own Weight Skip New Oak Barrels Short
Hollow Oak Reserve Mid Wild Yeast Own Weight Enable New Oak Barrels Medium
Faux Depart Mid Cultured Yeast Extended Enable New Oak Barrels Medium

My Approach to Getting Them All

What I found most helpful was to group these by harvest timing so I wasn’t constantly resetting my schedule. Several varieties share an Early harvest — Barely Legal, No.7 Batch, It happens, Sillent Celler, and Off Season — so once I was in that window I had a whole slate of wines to aim for. Similarly, the Mid group (Rust and grape, Mauvais Choix Reserve, Hollow Oak Reserve, and Faux Depart) and the Late pair (Last Dance and Dead line) let me batch my production instead of running around chasing individual recipes.

The thing that trips people up most is the yeast choice. You will notice three distinct strains across the list: Cultured Yeast, Wild Yeast, and Hybrid Yeast, and swapping one for another is the fastest way to end up with something that isn’t the wine you wanted. I double-checked this every single time, because it is genuinely easy to reach for whatever is on hand. The aging vessel matters just as much — New Oak Barrels, Old Oak Barrels, Concrete, and Stainless Steel each show up, and they are not interchangeable.

Watch the Malolactic Fermentation toggle too. Some of the best varieties in this list — including Mauvais Choix Reserve and Hollow Oak Reserve — require it enabled, while others like Lask Dance and Dead line want it skipped. Since it is a simple on/off switch, it is one of the easiest settings to overlook when you are moving fast through a busy season.

Keeping This List Current

Because the game is still in early access, I fully expect new wine varieties to arrive in future updates, and I will keep this list up to date as they do. For now, everything above is what I have confirmed works — set each combination exactly as shown and you will have the full collection in your cellar before you know it.
